Mango Mousse🥭🎂

🎂Sponge Cake Base:

Dry Bowl

Directions: Mix well, don't need to sift yet

Egg White Bowl

Directions: Add vinegar in egg yts, slowly add sugar. Get stiff peaks\

Egg Yolk Bowl

Directions: Mix water and sugar so that the sugar is coated in the water. Add in the egg yolks and vanilla, and whip until "thick and you should be able to create ribbons with it when you lift it up with a spoon". Stream the vegetable oil into the egg yolk mixture while mixing


Directions:

Oven: 25 Minutes @ 347°F\
Pan: Use springy pan and line bottom with parchment, no need to oil

  1. Add in half of your egg whites to your egg yolk mixture, and using a spatula gently fold together until just combined
  2. Sift in your dry ingredients, and gently fold through until just combined.
  3. Finish off by adding in the remaining egg whites and gently fold until just combined.
  4. Pour into pan, tap, and pop bubble with toothpick
  5. Once the sponges are done, immediately tap them on the counter from a height of about 10cm, and lay them upside down (while still in their baking tins) on a wire rack to completely cool


🥭Mango Layer:

Mango Mousse

Directions:

  1. Whip da cream, after stiff, add mango puree slowly
  2. Sprinkle gelatin over of warm water in separate bowl. Stir, heat in microwave for ~10-15 secs until it is clear and liquidy
  3. Mix some cream into gelatin, mix fast
  4. Mix rest of gelatin into cream
  5. Pour into pan and let cool for ~8 hours

Mango Gel

Directions:

  1. Bloom da gelatin (look at mousse section)
  2. Add a little mango in gelatin and mix hella
  3. Combine and mix rest of mango
  4. Pour over cake and let cool for ~2 hours
